Raw Banana Strawberry Tart


I've always wanted to try a raw fruit tart. This is the first one I made, but more will come for sure. It was simply wonderful! Besides the amazing taste and the beautiful appearance, I have to say it was so simple and fun to make. You should try to make one, I'm sure you're going to love it.





You can use another fresh fruits to decorate your pie, such as peaches, mango, apples, grapes, kiwis and much more as your taste. You also can add bananas to the filling when processed. Use your imagination!

INGREDIENTS (CRUST)

  • 2 cups organic raw almonds
  • 15 soaked pitted dates
  • 1 tsp vanilla extract
  • 1 pinch of salt

DIRECTIONS


Soak dates for 5 minutes and drain. In a food processor pulse the almonds into a coarse meal, like a thick flour. Add dates one by one and keep pulsing to combine the ingredientes. Add vanilla and salt.

The crust should hold together when you press it between your thumb and fingers. If is still to dry, add a little bit of water and pulse until it reaches the desired consistency.




Distribute evenly in a median sized tart or a springform pan. Firmly press the mixture into the bottom and up sides of the pan. If necessary, wet your hands to make spreading the mixture easier. Cover with plastic wrap and put it into the freezer while you prepare the creamy filling.





INGREDIENTS (FILLING)

  • 1 1/2 cup raw cashews
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 1/2 cup filtered water
  • juice of 1/2 lemon
  • 1 small very ripe banana



DIRECTIONS

In a blender churn the cashews and maple syrup into a paste while adding a little bit of water. Add frozen banana, coconut oil and lemon juice. Blend them throughly until completely smooth. If necessary add more filtered water for a very smooth creamy result. Remove the crust from the freezer and spread an even layer of the filling into the prepared crust. Set aside.







INGREDIENTS  (TOPPING)

  • 2 fresh sliced bananas
  • 2 cups strawberries

DIRECTIONS

Slice two medium bananas, but make sure is not too thin. Spread slices over the filling. Slightly press them against the cream so they fit well.




Slice strawberries and garnish the tart as your taste covering the bananas. Cover with plastic wrap and put into the freezer to chill for 2 hours before serving.


This pie is really amazing. I was so happy with the results.  So tasty, easy and fun to make. Quite a wonderful treat. You must try!
