Quinoa Flaxseed Gluten Free Buns


Here are delicious buns baked with quinoa and flaxseeds that are fat free, sugar free, fast and easy to prepare. You can also bake these in a skillet like you would bake a flat bread. Both quinoa and flax seed are very healthy. Quinoa is a highly nutritious grain and is a very complete source of protein. Quinoa also contains twice the fiber as most grains. Flaxseed contains ômega-3 fatty acids and is also rich in fibers. This is a great combination of ingredients and a wonderful choice to improve your health.





INGREDIENTS
  • 6 TBS quinoa flakes
  • 2 TBS ground flaxseeds
  • 12 TBS rice flour or any other gluten-free flour
  • 1 tsp baking powder
  • water enough to reach consistency
  • 1 tsp salt



DIRECTIONS
 
Rinse quinoa thoroughly. Soak overnight in a glass container. In the morning, drain excess water and rinse.  ( If using quinoa flakes, you can skip this step. )
In a bowl, combine all  dry ingredients and add water until dough looks like the picture below.



The dough should be firm enough for you to handle and shape it into small balls, similar to normal bread dough. If necessary, wet your hands to avoid sticking and this will make the shaping easier. Place the balls into a pan with parchment paper and bake for about 20 minutes or until buns are golden.




Remove from the oven and serve immediately. This recipe yields 9 or 10 small buns. If you want to bake dough in a skillet as a flat bread, this will also work.
  



This bread is best eaten on the same day you make it. It can become hard on the next day.
