Whole Wheat Banana Oatmeal Cake

To cope with the harsh Northern hemisphere's winter, where we live, there’s nothing better than a delicious and nutritious cake served with hot tea. It’s totally organic, made with whole wheat, bananas, white raisins and a little bit of sugar. If you like banana cake, you’ll love this one.



INGREDIENTS (Cake)

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 cup oat flour
  • 1/2 brown sugar
  • 1 pinch of salt
  • 1 TBS apple vinegar
  • 2 very ripe bananas, mashed
  • 1/2 cup cashew or almond cream*
  • 2 1/2 cups water, room temperature
  • 1/2 cup white raisins
  • 1 TBS vanilla extract
  • 1 TBS baking powder
  • 1 TBS cinnamon powder


INGREDIENTS (Topping)
  • 2 ripe bananas, thinly sliced
  • 1/2 TBS brown sugar
  • 1/2 TBS cinnamon powder


ABOUT THE CASHEW CREAM


*I used some cashew cream leftovers from another dessert recipe.

The cashews were put in water to soak the previous night and I simply processed them in the blender with a bit of water until they turned into a cream. If you prefer, substitute this cream for any vegan cream of your preference. As previously mentioned, I used this cream just because I had some of it around. I myself usually use vegetable oil or coconut oil for this recipe, but feel free to use any vegan cream of your preference. The amount to be use is also the same for them all.




DIRECTIONS (CAKE)

In a big bowl, put the 3 flours, salt and sugar. Add the cream of your choice and the mashed bananas, mixing them well. Add water gradually and stir (manually) until smooth. Next, add apple vinegar and vanilla. Set aside and follow the steps below to prepare the cake batter.

Preheat the oven at 180°C (356°F) and grease a round cake pan, preferably a Spring form pan. Cut the bananas lengthwise in 4 slices and each of these slices in further thinner ones to cover the cake batter. Set aside.

Go back to the cake batter and add the raisins and cinnamon, mixing them gently. Finally, add baking powder and mix gently. Pour the batter into the greased pan and spread it evenly. Cover the batter with the banana slices and sprinkle the brown sugar and cinnamon mix over them. Bake in preheated oven for 40 minutes, or a little more, if necessary. Check the cake with a toothpick; if it doesn’t stick, it is ready.






This cake it’s gonna fill your home with the most amazing smell. Make a cup of tea and enjoy it. Let cool a little before slice it.
