Avocado Lime Cake


Avocado is a very versatile fruit that you can use it in many ways. It taste great at breakfast, lunch, dinner or as a snack anytime of the day. It lends a rich, creamy texture to any recipe. I love avocado simply as it is. I thought about trying to bake a cake totally diferent that I ever did. So I decided to give it a try baking an avocado lime cake.




I ended up with a very rich moist cake with a mild flavor and a lively scent of lime zest. It has a lightly green color as a bonus. You can make a glaze to cover the cake or simply sprinkle powdered sugar and lime zest on top. To make the glaze, combine fine powdered sugar and lime juice adding lime zest and combining until smooth. It is delicious and very easy to make.







INGREDIENTS
  • 2 cups of all purpose flour
  • 1 1/4 cup of sugar
  • 1/2 cup of vegetable oil
  • 1 tbsp Vanilla essence
  • 1 tbsp white vinegar
  • 1 tsp of baking soda
  • 2 tsp baking powder
  • 1 cup water at room temperature
  • 1/3 cup mashed ripe avocado
  • 1 tbsp lime zest
  • 2 tbsp fresh lime juice
  • 1 pinch of salt


DIRECTIONS

Preheat oven to 360 degrees and prepare an angel food cake pan by coating with oil. Puree the avocado in a bowl or blender. Then mix in the oil, lime juice, vinager,vanilla and set aside. In a small bowl, rub the lime zest into the sugar until evenly distribuited. Transfer avocado mixture to a large bowl and add the sugar mixture while gently stirring. Add dry ingredients by mixing together just until incorporated. Do not overwork the batter.
Transfer the cake batter into the prepared pan and smooth out the top with a spatula. Bake for about 30 to 40 minutes on a preheated oven until toothpick inserted comes out clean. 





Let the cake cool on a rack in the pan for about 15 minutes before invert onto a plate.  





Slice the cake after completely cool. Apply glaze if desired, or simply sprinkle lime zest and sugar over the cake.
